Our full day masterclass cookery classes are held on Saturdays in Digbeth. The classes are designed for enthusiastic cooks looking to develop their personal cooking skills for the kitchen, rather than for complete beginners.
The classes have been inspired by our favourite cookbooks, recipes that have helped us to become better cooks and shaped our thinking about food.
At this level, we assume some basic level of competence in the kitchen, but we don’t expect you to have any knowledge other than what you have found out for yourself cooking for yourself, family and friends and of course a passion for good food! These courses are led by professional chefs and cooks.
Day cookery courses start at 10.30am and finish at 3.00pm. The class includes lunch with wine, food to take home and handouts of recipes. Day masterclasses are shockingly good value at £70 per person.
This is our programme for the next seven months:
17/11/18 – Salt, Fat, Acid, Heat – The principles of good cooking
The famous restaurant Chez Panisse, founded by the pioneering Alice Waters, the first chef in America to create seasonal simple recipes and reject the factory farming system. It has produced amazing chefs. My favourite cook book in 2018 was this one by Samin Nosrat. This book not only teaches you how to cook, but captures how it should feel to cook. She breaks down the principles of cookery in a brilliantly unique way. This class will explore the four principles with recipes from each.
