Budget & Beginners – 5 (Fish)

This is a course for beginners who want to cook better on a budget and learn the basics to become good home cooks.

We will show you some basics that will get you started and can adapt for several kinds of meals and how one dish can be used in many different ways.

Each week we will highlight one area of cookery over 6 weeks but at the end of each evening you will have mastered at least one dish you can take home.

For week 4 we focus on fish cookery. We will look at 2 types of fish to fillet and cook. We will fillet a mackerel or other round fish and a squid. We will discuss sustainable fish stocks and what is in season.

For our Fish  Cookery week, we will be teaching the following:

  1. How to fillet and gut a mackerel
  2. Demonstration of a filleting and cleaning a squid
  3. Cooking fish – frying or poaching
  4. Preparing classic accompaniments –  an Aoli Mayonnaise and Pickled Vegetables for the mackerel
