We have unashamedly taken the name from Hugh Fearnley Whittingstall’s recent TV series where he explores Scandinavian culture, and put together for you a menu of Scandinavian classic dishes that we will cook together to demonstrate Northern European cuisine.
The cuisine has moved on from Meatballs and Danish Pastries to offer a refreshing and original cuisine that is brilliantly native in its presentation and ingredients.
We will be cooking food that is more noma than Ikea, with a taste of contemporary cooking that is putting Denmark and Sweden and Norway on the culinary map. Highlights will be pickled vegetables and fish, seasonal meats. We will use wild foraged herbs (our own native herbs but in the style and spirit of Denmark and maybe we will cook some meatballs, but with a contemporary twist.
