This is a class for the cook who wants to develop their techniques with taste and flavouring.
Do you get stuck wondering what goes with what? One of our favourite books at Kitchen School is the Flavour Thesaurus by Niki Segnit. It’s invaluable when you are stuck for some more interesting flavour combinations and pairings. This isn’t a recipe book, but an exploration and a matrix/ methodology for working out what ingredients work together. For our taste class, we take her work as an inspiration, but we will create our own experiments in taste and flavour.
We will start the class with a little theory and palate development; tasting some spices and seasoning and some different foods and discussing where seasoning might work best and pairing food together. We will also look at texture and how this can also build flavour and add depth to a dish.
Following on from this we will cook some recipes which bring together the 5 tastes – sweet, salty, sour, bitter and umami, looking at both Eastern and Western traditions of flavouring and how we can learn from each.
This is going to become our favourite class, because it is so utterly food geeky, but actually gets to the heart of being a good cook.
