We will explore vegetable cookery using Eastern Mediterranean ingredients.
Ottolenghi has revolutionised English palates with his warm spicing and innovative partnerships of vegetables and herbs to create inspiring dishes, which are high on health and taste.
We will work with courgettes, aubergines, candied beetroot, cauliflower and grains, brought together with sumac, parsley, coriander, yoghurt, tahini and preserved lemons.
We will also touch upon principles of cookery, how to taste, season, the application of different cooking techniques to achieve different results. I good basic cookery class for the improver!
